Our Practices
Producing exceptionally delicious turkeys isn’t hard, but it requires patience and a willingness to sacrifice efficiency for quality. A turkey will reach maturity in 20 - 26 weeks, depending on the breed. Turkeys are big animals with females ranging from 12 - 22 lbs, and males from 25 - 45 lbs. Because of their size, turkeys eat a lot. When mature, a turkey will eat $10 - 25 worth of food a week. Naturally, commercial farms slaughter their turkeys as soon as they are mature because raising them longer gets very expense.
However, if you raise a turkey to ~32 weeks, they don’t get much heavier, instead their bodies begin to deposit fat under the skin and in the breast tissues. The result, the most juicy flavorful turkey you have ever tried. Trust us, or any of the folks that have tried our turkeys in years past. Without exception, every one of our turkeys get the same praise, “That was the best turkey I have ever tried, I didn’t know turkey could be so good.”
We raise turkeys each year for our own Thanksgiving tables, and share the extra birds we produce with friends and family in the Rappahannock area. We very humanly and personally process our turkeys on the Monday of Thanksgiving week. Each bird is immediately placed in a flavorful brine and keep cold, but not frozen, until its ready for roasting on Thanksgiving day.
